Their Story

Squatters Pub Brewery, operating as Salt Lake Brewing Co., was founded by Jeff Polychronis and Peter Cole on September 5, 1989, at 147 West Broadway (300 South) in Salt Lake City. The location was in what was then considered the "red light" district, making it Salt Lake City's first modern brewpub. Cole and Polychronis, business partners since the late 1970s, spent a year researching over 40 brewpubs across the Pacific Northwest to gather inspiration before opening. Their original slogan was "Good for What Ales You." In 2000, Squatters merged operations with Wasatch Brewery to form the Utah Brewers Cooperative, maintaining separate brand identities. The brewery was acquired by Fireman Capital Partners in 2012 and became part of the CANarchy Craft Brewery Collective in 2017, before the original founders bought back the company in 2022, returning it to local ownership.
